Ingredients:

- Cup Moong Dal - 3/4cup
- Eggplant - 2nos
- Purple round Radish - 3nos
- Pieces of Drumstick - 3-4nos
- Turmeric powder - 1tsp
- Sambar powder - 2 1/2tbsp
- Onion - 1medium size
- Tomato - 1medium size
- Mustard seeds - 1tsp
- Fenugreek seeds - 1/2 tsp
- Tamarind pulp - 1/4 tsp
- Asafetida - 1/2 tsp
- Oil as needed
- Salt for taste
- Curry leaves - Optional
- Now, add the cut vegetables, turmeric powder salt to the dal cook for 7-10 minutes.
- Add the sambar powder and Asafetida and mix well with the gravy.
- Then, add the tamarind pulp to the gravy.
- In a kadai heat, 3tbsp of oil splutter the mustard seeds first then fenugreek seeds then add the chopped onion fry for 6-7 minutes.

- Add the chopped tomato fry for 6-7minutes until the tomatoes are soft and oil separates.
- Now, add the dal with vegetables to the kadai and cook for 2-3 minutes.
- Sambar is ready to serve with rice, Idli, dosa, and roti.
Cooking Tips
- Instead of sambar powder, you can use 1 1/2tbsp chili powder and 2tbsp of coriander powder.
- And you can use any kind of vegetables.
