Classic Chess Pie
Gooey, buttery and very sweet classic chess pie is famous in the southern part of the US. As a baker that's what my close friends say when I checked the recipe for the first time, I was wondering how a tablespoon all-purpose flour and a spoon of cornmeal can be the thickening agent for a 9-inch pie.
But, to my surprise, it was one of my family's best pie. They liked the buttery sweetness and it was a hit with my kids. My little one asked me to make one more time and this is the second time I am making it. It is still a hit with my family. We had hot pie with cold vanilla icecream.
It was a heavenly dessert with the gooey, buttery sweetness and the melting ice cream on top with a drizzle of caramel sauce "hmmmmmm hmmmmm hmmmmm" my little ones words for the pie.
Ingredients
Pie dough
- All-purpose flour - 1cup
- Granulated Sugar - 1/2tbsp
- Salt - 1/2tsp
- Butter - 3/4stick, cold
- Milk - 4tbsp, cold
- Egg - 1no
- Vanilla bean - 1tsp
Pie Filling
- Sugar - 1cup
- Cornmeal - 1tbsp
- All-purpose flour - 1/2tbsp
- Salt - a pinch
- Butter - 4tbsp,melted
- Milk - 4tbsp
- White vinegar - 1tbsp
- Vanilla extract - 1/2tsp
Instructions
Bake Pie Crust
- After making the dough put it in the fridge to keep the dough chilled for 2 hours.
- Then roll the dough to fit in a 9-inch pie pan. Line pastry with aluminum foil.
- Fill with dried beans or pie weights and bake in a 350degrees pre-heated oven for 20 minutes.
- Cooldown the baked pie completely.
Pie Filling
- Add sugar and melted butter in a bowl, Stir together for 2 minutes with a whisk.
- Now add the cornmeal and all-purpose flour and mix it well with lumps.
- Then add the remaining ingredients as stated above and combine them with the sugar, butter mixer. you don't have to over beat the pie filling just combine it well that is enough.
- Pour the pie filling in the pre-made pie crust. Bake the pie in a preheated 350-degree oven for 50 -55 minutes.
- Serve hot with any kind of ice cream scoop on top or cool down the chess pie completely and serve just the pie.
Cooking Tips
- Cover the edge of the pie crust with aluminum foil to avoid excessive browning of the pie crust.
