Classic chicken 65


An all-time favorite for the people in south India. In every restaurant and in every roadside stall we can't miss Chicken 65. It is one of my regular dishes every other week which I make at home.

I use a very small amount of cornflour to give that crispy coating , and the one more secret ingredient is a tandoori powder to give the smoky flavor to the fried chicken. To make the chicken a softness I use yogurt. 

The marination part is very important to make the chicken observes species.        

Ingredients

  • Chicken - 1lb (cut into bite-size pieces)
  • Salt - 1tbsp
  • Chili powder - 1tbsp
  • Turmeric - 1tsp
  • Ginger-garlic paste - 11/2tbsp
  • Yogurt - 1 1/2tbsp
  • Tandoori masala - 1tsp
  • Garam masala - 1/2tsp
  • Corn flour - 1tbsp

Instructions
  • Add all the ingredients together in a bowl.
  • Combine well and keep it aside for marination for 1 hr.
  • Heat the oil in a frying pan and deep fry the marinated chicken.
  • Server hot and crispy with rice, chapati and it will be a very good starter on its own.

Cooking Tips
  • You can use rice flour instead of the cornflour or an egg will give the same crispiness to the chicken.
  • If you're health-conscious you can bake in the oven. Just pre-heat the oven to 350-degrees and line the chicken in a baking tray, spray a non-stick spray on the chicken or add some butter or oil and bake for 30minutes. You will get the same crispiness.
