Fusion Curried Fried Rice
This Curried fried rice is my way of making fried rice when I have a bowl of leftover rice at home and don't know what to do with it. This rice is a nice healthy lunch box for the kids and can be made within 15 minutes.
You can add any kind of vegetables, chicken, meat or any kind of seafood to it. Sometimes I even use dry anchovies and trust me it will taste good. Garnish it with coriander leaves or spring onions.
You can make it quick on a lazy day. Good for big gatherings also. Any kind of pickle will complement well with the fried rice or even with sriracha.

Ingredients
- Leftover rice - 2cips (cooked)
- Mustard seeds - 1 1/2tsp
- Jalapeno peppers - 1no
- Onion - 1large size
- Ginger-garlic paste - 1 1/2tsp
- Turmeric powder - 3/4tsp
- Chili powder - 1tsp
- Egg - 2nos
- Soy sauce - 1tbsp
- Salt to taste
- Oil as needed - 4tbsp (I used)
Instructions
- Heat the oil in a pan or kadhai. Splutter the mustard seeds.
- Now, add the chopped the onion, peppers, and curry leaves. Satue for 4 to 4 minutes till the onions are translucent.
- Add the ginger-garlic paste, salt, and turmeric powder. cook for few minutes till the smell of ginger-garlic is gone.
- Then add the beaten eggs and chili powder. Just mix it well with the onion masala, let it sit in the flame without stirring for 2 minutes.
- After 2 minutes mix the onion masala with the egg and chili powder. You have to make the eggs into big chunks without making into scrambled egg.
- Add the cooked rice mix well with the masala and cover the lid. Let it sit in the medium flame for 3 to 5 minutes with occasional stirring in between.
- Finally, put the flame in high heat. Add the soy sauce and combine it well with the masala rice. Cook in high flame for the next 2 to 3 minutes.
