Kathirikai Vathakal
Back home, my mom makes at home and after so many years I
almost forgot the recipe. As we know eggplant is not a most
favorite vegetables in most families and we are one of them. To
make it an interesting one I tried it.
This is one more different way of making eggplant then usual. It is a good side dish. The special spice mix is the main part of the recipe. The spice blend gives a crunchy structure to the curry.
When you give it a try don't add any water to make it a dry curry.
If you add water the eggplant will get mushy and the eggplant won't retain its shape and also won't blend well with the spice.
Just the kathirikai vathkal alone is enough and goes well with rice if you are lazy to make gravy for rice. If it is served hot with sambar sadam with a spoon of ghee you won't stop with one round.

Ingredients
- Eggplant - 4 medium sizes
- Onion - 1 medium size
- Mustard seeds - 2 tsps
- Turmeric powder - 1 tsp
- Salt for taste
- Curry leaves (optional)
Dry Roast Ingredient
- Red chillies - 4 nos
- Coriander seeds - 1 heaped tbsp
- Channa dal - 1 heaped tbsp
- Moong dal - 1 heaped tbsp
- Cumin - 1 tsp
- Sesame seeds - 1 heaped tbsp
- Cinnamon stick - 1 small size
Preparation Time : 15 mins | Cooking Time : 20 mins | Serves : 3-4
Instruction
- In a pan roast all the dry roast ingredients till you get a nice aroma.cool done for few minutes & grind into coarse texture don't make it into powder.
- Cut the eggplant in long size pieces.
- Now heat a kadhai and add oil. when the oil is heat splutter the mustard seeds & curry leaves.
- Then add the onions fry till the onion is translucent.
- Add the eggplant and mix it well with the onion.
- Add the salt and turmeric powder saute for 5 more minutes.
- Whenthe eggplant is cooked soft add the grind mixer & combine.
- After 2 minutes switch off the stove.
- Server with sambar sadam, Roti or even goes well with dosa.
Cooking Tip
- The spice blend should be coarsely ground do not make it into powder. It will spoil the curry taste.
- Do not add water to the eggplant at any point.
