Sugiyan(Green Gram Fritters)





One of my childhood favorites is this Sugiyan or my family calls it,

Seeyam. My mom makes it every Diwali morning without fail

She will do all the prep work and it's me and my dad's job to make 

the balls. My mom makes it in a good quantity and we save it the 

fridge for the next day only because when you refry it again the 

next morning it will be more crisper and taste hmmm yummy yummy 

then the first day.


Generally it is made with moong dal and the outer coat will be 

besan flour. My mom makes it with green gram & the outer coating 

with maida flour. It has a crispy outside & a very soft sweet 

green gram with a flavor of coconut. 


Simple ingredients and easy to make even for beginners.
Worth giving it a try!



Preparation Time: 30 mins | Cooking Time: 20 mins | Serves: 3-4
Ingredients 


For the inside stiffing  
  • Green Gram - 1cup
  • Sugar - 1cup
  • Shredded coconut - 1/4cup
  • Salt - 1pinch

    For the outer coating 
    • Maida flour - 3/4cup
    • Egg - 1
    • Sugar - 1tbsp
    • Salt - 1pinch
    • Oil for deep frying 


    Instructions

    • In a saucepan add green gram & water and cook the green gram till you can smash with your fingers. it shouldn't be overcooked.

    • When you can smash with your finger drain it in a strainer and let it cool down a bit. water should be completely drained.

    • When it is cool down smash the green gram with your hands or you can use a mixer grinder. Again it shouldn't be over smashed we should have some whole green grams.

    • With the smashed gram add the coconut and sugar, combine it well.

    • Then make the mixer into medium size balls or your desire size balls and keep aside.

    • Now in a bowl add maida, salt, egg, and sugar, beat well without any lumps to a dosa batter consistency.




    • Heat the oil in a frying pan. Dip the green gram balls in the maida batter and fry it in the hot oil.

    • It will fry in 2 to 3 minutes will not take longer than that.



    Cooking Tips 

    • It's better to cook the geenr gram on the stovetop instead in a pressure cooker. It will get overcooked when doing it in the cooker. 
    • You can use jaggery instead of sugar. Jaggery is a healther version of sweet.
    • And wheat flour can be replaced with maida if you are health-conscious.
