Nice side dish for sambar sadam or can make a chapati roll or make sandwich filling.
It is one of my favorites side dishes which my mom makes often in my childhood. After marriage I made this for my husband for sambar and rice, He liked it much as it seemed a new combo for him, beans and eggs. I will go well with everything eve for chapati.
Cut the beans into 1-inch pieces and don't overcook the beans, it should be chrunchy. If you make into small pieces it will overcook soon and when combined with egg it will be mushy and won't taste good and add oil little over than usual will taste better.
Ingredients
- Beans - 2cups (Chopped)
- Onion - 1medium size (chopped)
- Mustards seeds - 1 heaped tsp
- Green chilies - 2nos
- Egg - 1no
- Turmeric powder
- Sambar Masala - 1tbsp
- Curry leaves - optional
- Oil as needed
Instructions
- Heat the oil in a pan, splutter the mustard seeds.
- Add the chopped onions, curry leaves and green chilies, saute for 3 to 4 minutes until slightly brown.
- Then, add the chopped beans and cook for 5 minutes.
- Add the salt and turmeric powder, cook for 5 more minutes.
- Now, crack the egg and the sambar masala in the middle of the pan and just mix it with the bean. Don't over mix it just saute the beans with the egg and leave on the stove on a medium flame for 2 to 3 minutes.
- Mix one more time and cook for 2 more minutes.
- Server as a side for rice or make a chapati roll or can be made as a sandwich filling.
