Oven Roasted mixed vegetable with Indian spices

The best way to have different types of vegetables, the way kids like it. It is very difficult to feed vegetables to my boys and this is one of my simple and tasty versions to feed them vegetables. 

They like these roasted vegetables with white rice, I give it with Rotis and even with dosa. You can make chapati rolls, make a simple raitha as the sauce for the roll or spread some cheese on the chapati or paratha then the roasted vegetables fold the chapati or paratha and toast it in a pan with some butter. It can be a great school lunch. 

I used some grill masala to give that smoky flavor to the veggies. You can use any kind of mixed vegetables sweet potatoes, cauliflower or broccoli. If you have a griller you can make the vegetables into skewers and grill it in the griller. 

Ingredients

  • Potato - 2large size (chopped into cubes)
  • Carrot - 1large size (chopped into cubes)
  • Capsicum - 1large size (chopped into cubes)
  • Onion - 1 large size (chopped into cubes)
  • Chili powder - 1tbsp
  • Coriander powder - 1 1/2tbsp
  • Cumin powder - 1tbsp
  • garam masala - 1tsp
  • Grill masala - 1tsp (optional)
  • Yogurt - 1/2cup
  • Oil - 1/4cup
  • Salt to taste

Instructions
  • Preheat the oven to 450 degrees F.
  • In a bowl add all the spices, yogurt, oil and salt, mix well and make a paste.
  • Then, In a large bowl, add all the chopped vegetables and add the spice and yogurt mixture.
  • Mix until the spice mix and the vegetables are well combined and marinate for 1/2 an hour.
  • Cover the sheet pan with foil and spray some cooking spray and spread the marinated vegetables in the pan.
  • Bake the vegetables in the preheated oven for 25 to 30 minutes or until roasted well, saute in between every 7 to 10 minutes.
  • Server hot with a rice variety or even for Rotis and can be served with dosa. 
Cooking Tips
  • You can use any vegetables like cauliflower, broccoli, sweet potatoes, etc.
  • You can adjust the spicy according to your level of spiciness and even you can use American spices to make the American version of roasted vegetables.
  • You can make it in a griller or even in stovetop.
