Thin Crisp Christmas Cookies


When it comes to Christmas it becomes a tradition to celebrate. My boys desperately wait till Christmas Even to put the cookies and milk under the tree, wait till morning for Santa to give them gifts.

This time they want me to make the cookies for Santa and I baked these crispy thin cookies. It is very simple to make just beat the ingredients in two steps and bake for 12 minutes.

Fingers cross hoping Santa will like it.


Ingredients

  • Egg Yolk - 1large
  • Heavy cream - 1tbsp
  • Vanilla extract - 1tbsp
  • Lemon juice - 1tbsp
  • Unsalted butter - 1stick
  • Sugar - 3/4cup
  • Lemon zest - 1tbsp
  • Salt - a pinch
  • Unbleached all-purpose flour - 1cup


Instructions
  • Adjust oven rack to middle position; heat oven to 375 degrees.
  • In a small bowl, beat yolk, heavy cream, vanilla, lemon zest, and lemon juice with a fork until combined and set aside.
  • In an electric mixer, cream butter, sugar, and salt at medium-high speed until light and fluffy for 3 to 4 minutes. 
  • With the mixer running add the beaten egg yolk mixture to the butter mix until combine for 30seconds.
  • Then, add the all-purpose until combine for another 30 seconds and with a rubber spatula ensure that no flour pocket remains.
  • Use small size balls and place it in the baking pan in 3 to 4 inches between the cookies. Sprinkle some sprinkles on top.
  • Bake the cookies for 12 minutes.
  • Crispy thin cookies are ready.
