Chicken Sukka


The Ultimate Chicken sukka of south Indian, one of the famous dish delicious delicacy and simple recipe even for the beginners to make.

Small pearl shallots are used and as I couldn't get small shallots I used the pearl onion. You can just use the small shallots alone without any onion it will taste better and whole garlic will give a nice flavor to the dish.

You can just make a rasam sadam and serve with chicken sukku or I live to eat with plain white rice "Hmmmm Delicious". Just adjust the spicy level according to your family.    
Ingredients
  • Chicken - 2lbs
  • Onion - 1medium size
  • Pearl or small Indian shallots - 20nos
  • Tomato - 1large size
  • Garlic clove - 10 to 15cloves
  • Bay leaves - 1no
  • Cinnamon - 2 small pieces
  • Star anise - 1no
  • Fennel seeds - 1tbsp
  • Ginger-garlic paste - 3tbsp
  • Green chili - 2small size
  • Curry leaves - 1string
  • Coriander leaves - 2 to 3 strings
  • Chili powder - 1heaped tbsp
  • Coriander powder - 1 1/2heaped tbsp
  • Garam masala - 1tbsp
  • Shuddered coconut -  1/2cup
  • Oil as needed
  • Salt to taste
To dry roast and coarse grind
  • Dry red chili - 5 to 6nos
  • Coriander seeds - 3tbsp
  • Peppercorns - 2tbsp
  • Cumin seed - 2tbsp

Instructions
  • Dry roast the ingredients and coarse grind, keep aside.
  • Cut and clean the chicken add 1tbsp of salt and 1tbsp of ginger-garlic paste and keep it aside.

  • Heat oil in a kadhai and splutter fennel seeds, cinnamon sticks, star anise, and green chilies.
  • Add the chopped onions, pearl onions and sauté until the onion is translucent by keeping the flame in medium-high.
  • Then, add the ginger-garlic paste, salt,  and turmeric powder, cook for 3 minutes till the ginger-garlic smell is gone.

  • Then, add the tomato and garlic, saute for 2 minutes and add the chicken pieces to the onion-tomato mixture.

  • Cook for 5 to 7 minutes and then, add the chili powder, coriander powder, and garam masala. Mix the masalas well with chicken.
  • Cook for another 5 minutes and then, add the ground powder.
  • Cook the chicken in the masala until it is dry and roasted.
  • Serve with rice, rotis, naan or even dosa.

Cooking Tips
  • If you use shallots the chicken will taste better.
  • And use chicken with bones to get a better taste.
