The easier way to good rice fast and perfect is to use Instant pot. This vegetable pulao is simple and very easy to make if you are inviting big gatherings. The Instant pot keeps the rice warm with the keep mode.
I used Frozen vegetables to make the work even easier. I used milk to give the rice an extra richness you can avoid by using only water or to give even more flavor you can use coconut milk. You can use any type of vegetable or with no vegetables as well.

- Basmati rice - 2 cups
- Mixed Vegetable - 1cups
- Cumin seeds - 1heaped tbsp
- Cinnamon stick - 2sticks
- Bay leaves - 1no
- Star anise - 1no
- Green chili - 2nos
- Onion - 1large size(chopped)
- Ginger-garlic paste - 1heaped tbsp
- Tomato - 1small size(chopped)
- Curd - 1/2cup
- Coriander powder- 1tbsp
- Garam masala - 1tsp
- Milk - 1cup
- Salt to taste
- Oil and ghee equal as needed
- Put the instant pot in the saute mode.
- Heat oil and ghee in the equal ration in the instant pot. Splutter the cumin seeds, whole masalas, and green chilies.
- Add the chopped onions and saute until translucent about 3 to 4 minutes.
- Then, add the ginger-garlic paste and salt, Cook for 3 to 4 minutes.
- Add the chopped tomatoes and curd, cook till the tomatoes are soft and the curd is cooked till water evaporates.
- Add the mixed vegetables and combine well with the onion curd mixture and cook for a minute.
- Now, add the coriander powder and garam masala and again cook for 3 to 4 minutes.
- Now, add the washed and cleaned basmati rice, mix well with the onion vegetable mix.
- For 2 cups of rice, I have added 4 whole cups of liquid. I used milk and water in a 1:3 ration.
- Cook till the milk water start boil.
- Close the lid and put the instant pot to rice mode.
- Server hot with raita.
