Spritz Cookies



A perfect Spritz butter Cookies, super crunchy, extra buttery with a crispy bite. The most choice one my family my elder son and he loved and told me that it is the best cookie he had so far and I become the proud mom.

If you are using the same cookie sheet for the next batch, make sure you cool down the sheet bake the next baking. You can store the cookie dough in the fridge for up to 4 days just make it to room temperature by keep the dough outside the fridge for 45 to 1 hr.

You can also freeze the cookies for more than 1 week. The best way is to shape the cookies in a baking sheet put it in the fridge for 1 hr after it is cold transfer it to a zip-lag bag and store it in the fridge.    
Ingredients 
  • Egg yolk - 1large 
  • Heavy cream - 1tbsp
  • Vanilla extract - 1tsp
  • Lemon juice - 1tsp
  • Butter - 2 sticks(softened)
  • Sugar - 2/3cup
  • Lemon zest - 1tsp
  • Salt - 1/4tsp
  • All-purpose flour - 2cups

Instructions
  • Heat oven to 375 degrees and adjust the oven rack to the middle position.
  • In a small bowl, beat yolk, cream, vanilla extract, and lemon juice with a fork until combined and set aside.
  • In a hand mixer or standing mixer, cream butter, sugar, lemon zest, and salt at medium-high speed until light and fluffy for 3 to 4 minutes.
  • Then, add the cream mixture and beat until incorporated, about 30 seconds. Scrape down the bowl.
  • With the mixture running at low speed, gradually beat in flour until combined. Scrape down the bowl and using a spatula stir to ensure that no raw flour remains.
  • Using a pastry bag pipe cookies onto ungreased baking sheets, spacing them about 1-1/2 inches apart.
  • Bake one sheet at a time until cookies are light golden brown color 10 to 12 minutes by rotating the baking sheet halfway through baking time. 
  • Cool cookies on baking sheet until just warm, 10 to 20 minutes and then transfer to a wire rack cool down and store in an airtight container.  
Cooking Tips
  • Keep watching the cookies when they are in the oven because the bake time defers from the type of oven we use. For me, it took only 8 minutes to get lightly golden brown color.
  • If u use a Cookie presser u make use of different sizes and shapes to the cookies at the same time much easier than pastry bags.
