Molten Chocolate Cake

Molten chocolate cakes become famous for a reason they are cakey on the outside with irresistible center of warm dark chocolate flowing through the middle.

It seems as though every restaurant in America offers a version of this amazing chocolate cake. But, this rich chocolaty original is in a class by itself.

The first time you try, it may seem like magic, but this recipe is actually quite easy to make and ready in under an hour. No much beating of batter required or no long baking hours required.

When we bake anything in a baking oven there are different types of oven settings and the time differs from one oven to another. Actual baking time is 12 minutes for this particular recipe but, my oven just needed 10 minutes of baking to get a perfect consistency. So, you have to be eye watching the baking time and consistency, some may need more time or less time.     


Ingredients

  • Dark Bittersweet chocolate - 5 ounces(150g)
  • Dark Cocoa powder - 1tbsp
  • Unsalted Butter - 1stick
  • All-purpose flour - 1cup
  • Large egg - 4nos
  • Granulated Sugar - 3/4cups
  • Vanilla Extract - 1tsp


Instructions

  • Preheat the oven to 450F. Butter and lightly flour four 6ounce ramekins.
  • In a water-bath, over simmering water, melt the butter with the chocolate and cocoa powder.
  • In a large bowl, beat the eggs with the sugar until foamy.
  • Stir the chocolate mixture until completely smooth.
  • Whisk egg-chocolate mixture along with the sifted flour.
  • Scoop the batter into the prepared ramekins.
  • And, bake for 12minutes or until the middle part of the batter is still runny.
  • Carefully turn each ramekin over the plate and serve immediately.
  • The hot molten cake can be topped with a scoop of your favorite ice cream or can be eaten as it is.


Cooking Tips

  • The batter can be refrigerated up to 3 days. Bring it to room temperature before baking.
  • Baked molten chocolate cakes can also be made in advance, refrigerated or place in the freezer for weeks. 
  • If frozen, leave lava cakes to room temperature for an hour and microwave them for about 20 seconds or until warm and serve. Garnish with some fresh raspberries, currants, mint leaves, and powdered sugar if you wish.
