Kadalai Vadai(Chickpeas Vada)


When it comes to evening snacks in South Indian Kadalai Vadai or paruppu Vadai is classic. 

Using channa dal is the authentic way of making the vadais. I used soaked chickpeas instead of the channa dal to give some extra flavor and crispiness. And I used a small piece of cinnamon stick for the same purpose. While grinding the chickpeas I will add some chopped onion that will also give the vadais some crispness. 

We use to have a ritual when we were kids to have twice a week from road street shops. Our family will have hot tea or coffee with this roadside delicious and use to talk lots of stories, my best period of life.
 
Ingredients 
Chickpeas - 1-2 cups( soaked for 8hrs or overnight)
Onion - 3medium nos
Dry red chili - 4 to 5nos
Cinnamon stick - Small 1in piece
Few Curry leaves - optional
Coriander Leaves - 3strings
Salt to taste
Oil for deep fry
Instructions
  • In a mixer jar add the soaked chickpeas, 1 onion chopped, cinnamon stick, and red chilies. Coarsely grind the mixture without adding any water.
  • Then, to the grounded mixture add 2 thinly sliced onions, salt, curry, and coriander leaves.
  • Heat oil in a frying pan. Make the mixture into desirable patties and deep fry until crispy.
  • Serve hot evening snack with chutney or western style with seasoned mayonnaise(with some chill powder, cayenne pepper, onion powder)
Cooking Tips
  • The broken dry channa dal will be a good option to make it in a traditional way of vada. I used chickpeas just to enhance the taste and crispness of the vadas.
  • Use some chopped onions and a small pieces of cinnamon stick with the chickpeas which will give the vadais extra crisp and flavor. The cinnamon stick gives the vadai a unique aroma.
