Wok plain Briyani
- Basmati Rice - 2 cups
- Onion - 2nos Medium size
- Tomato - 2nos medium size
- Fennel seeds - tbsp
- Cumin - 1tbsp
- Green Chilies - 3 to 4nos
- Cloves - 3nos
- Cardamom - 2nos
- Bay leaves - 1 large
- Cinnamon stick - 1 medium size piece
- Crusted Ginger-garlic - 2tbsps
- Briyani Masala - 3tbsp
- Yogurt - 1/2cup
- Ghee and Oil Mixed - 1/2cup plus 2tbsp for cooking rice
- Fried onions - 1cup
- Food color - a pinch (optional)
- Salt to taste
- Ghee and oil - 1/2cup(combined)
Shrimp Fry
- Clean shrimp - 10 to 15nos
- Ginger-garlic - Crushed 1 1/2tbsp
- Turmeric powder - 1/2tsp
- Curry powder - 1tbsp
- Chili powder - 1tbsp
- salt as needed
- Oil to shallow fry
- In a large pot boil water with cumin, 1/2 bay leaves, small cinnamon stick, cloves, Then, add the washed rice and cook till it is 3/4th down.
- Heat Ghee and oil in a heavy bottom wok. Splutter cumin -seeds green Chilies, cloves, cardamom, bay leaves, cinnamon stick.
- Then, saute the chopped onion till golden brown.
- Add the crushed ginger-garlic, and cook until the ginger-garlic is well cooked with onion.
- Now, add the chopped tomatoes, salt, turmeric powder, and yogurt, cook until the oil separates from the gravy.
- Then, add the biryani Masala and cook well for 3 to 4 minutes.
- Add the chopped cilantro and mint leaves, mix well.
- Now, add some chopped cilantro, mint leaves, and some fried onions.
- On top of the chopped cilantro, mint leaves, and some fried onions add half of the cooked basmati rice. Then, add another layer of chopped cilantro, mint leaves, and some fried onions on top of the rice.
- Then, add the leftover rice as one more layer then, add the fried onions and the food color mix with milk(optional).
- Cover it with lid and cook in low flame for 20 mins.
Shrimp Fry
- Mix all the ingredients in a bowl and keep it aside for 30 minutes.
- Shallow fry shrimp till crisp and well cooked for 2 minutes on both sides
- I serve hot with plain biryani.
