Banana Zucchini Bread

I always wanted to cook something special every time when my boys are at home. They love my baking and likes when I try something at home with my cooking or baking. It's been more than 2 months since my husbands and my boys are at home on lockdown and They want something interesting to eat as it is obvious that it becomes hard to eat outside in restaurants and It is difficult for me to think about a good breakfast every morning. So, I thought of trying this bread and it came out to be the best bake bread and my family loved it too. 


This easy quick bread is a great way to use up summer zucchini and brown bananas. With very few ingredients it is simple and easy to make with a subtle sweetness with a warmth of the cinnamon and with nutty walnuts. Banana bread to me is one of the best comfort foods to wake up to.  They’re as simple to mix up as muffins but even easier because you just pour the whole batter into the loaf pan and bake!  

For extra taste, believe me, toast a slice of bread in a pan and apply a nice chunk of soften butter on the bread and we loved it.

Best with a cup of tea and melting butter spread on the slice!  I may have had a hard time stopping at one slice!    

Ingredients
  • Sugar - 1cup
  • Vegetable oil - 1/2cup
  • Mashed ripe banana - 1cup(2medium sized banana)
  • Zucchini - 1cup(shredded)
  • Egg - 2 large
  • Vanilla extract - 2tsp
  • All-purpose flour - 1 1/2cup
  • Cinnamon - 1tsp
  • Baking powder - 1/2tsp
  • Baking soda - 1/2tsp
  • Salt - 1tsp
  • Walnuts - 1cup(washed in water)


Instructions
  • Preheat oven for 350 degrees.
  • Beat together the oil and sugar in a hand or stand mixer.
  • Add in the mashed banana, egg, and vanilla to the oil sugar mixture.

  • In a medium bowl whisk together all the dry ingredients - the flour, cinnamon, baking powder, baking soda, and salt.
  • Then, add the dry ingredients into the wet and stir on low until just combined.
  • Add a tbsp of flour in the walnut and mix well.
  • Using a spoon fold in the zucchini and walnut.

  • Spray a loaf pan with cooking spray and pour in the batter.
  • Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean. It took 48 minutes in my oven.

Cooking Tips

  • You can add almonds, cashews, or pecans instead of walnuts. You can even add cranberries, Rasinis, or carrots.
  • It can be made with 1 egg but, I added 1 more for extra moist.
