When there are tons of homegrown Zucchini harvested. You will find different ways to cook the zucchinis. I am trying it in so many ways from starter to dessert. It's going to come one by one in the blog.
Today I try kootu with zucchini, can out very well, and become one of my family favorites. Unbelievable combo with dosa. My boys said to make it every time whenever I am going to make dosa for dinner.
Ingredients
- Moong dal - 3/4 cup
- Zucchini - 2-3 medium size (chopped into cubes)
- Onion - 2 medium size
- Tomato - 2 medium size
- Turmeric powder - 1 tsp
- Sambar powder - 1 heaped tbsp
- Cumin seeds - 1 tbsp
- Mustard seeds with urad dal - 1 1/2 tbsp
- Dry chilies - 2 nos
- Shredded Coconut - 3/4 cup
- asafoetida powder - 1/4 tsp
- Oil - 1/2 cup
- Salt - To taste
Instructions
- Pressure cooker the moong dal until 2 whistles.
- Then, add the cubed zucchini, salt, and turmeric powder cook with a cup of water until the zucchinis are cooked.
- Mix the sambar powder, and shredded coconut to the cooked zucchini/ dal and keep it aside.
- Heat oil in a kadai, splutter the mustard/urad dal, and dry chilies. Add the chopped onions and cook for 4 to 5 mind till slight brown.
- Add the chopped tomatoes and cook till it is well cooked.
- Now, add the prepared zucchini/dal mixture to the onion/tomatoes mixture and let it boil for 2minutes.
- Finally, add the cumin seeds, and asafoetida powder and mix well with the gravy.
- Serve hot with rice, Rotis.
