Tomato Pickle


Pickle plays a manager role in our cuisine. Pickle is a must when it comes to a meal in South India. We make pickles in all most with every vegetable. Here is the recipe for Tomato Pickle.   

Ingredients

  • Red ripe Tomato         - 5-6 large nos(chopped into chunky pieces)
  • Tamarind                - Big Lemon size
  • Chilli powder           - 3 heaping tbsp(according to the spice level) 
  • Mustard seeds           - 2 heaping tbsp
  • Garlic                  - 2 whole(peeled & cut into medium size                              pieces if you have large garlic cloves)
  • Curry Leaves            - 2-3 strings
  • Asafetida powder        - 1tbsp
  • Salt                    - to taste
  • gingelly oil            - 3/4 cup

Instructions

  • Heat a non-stick Kadai, add the chopped tomatoes and the tamarind. Cook the tomatoes and the tamarind in a med-high flame until the water from the tomatoes evaporates for 15-20 minutes.

  • Then, add the chilli powder and salt. cook for the next 5-10 minutes. 
   


  • Heat oil in a separate pan and splutter the mustard seeds. 
  • Add the garlic, fry until the garlic is golden brown. 
  • Splutter the curry leaves now.
  • Then, pour the oil-garlic mix to the tomatoes-tamarind mixture.
  • Add the asafetida powder and cook till the tomatoes-tamarind and oil-garlic is well combined and cooked well. When it combines and comes to pickle consistency (takes about 10minutes) turn off the stove.
