Tres Leches Cake with Delce de Leche whipping cream frosting

Tres Leches is a popular authentic Mexican cake. The syrup is made of - tres leches(which means three kinds of milk). You poke holes into the cake before pouring over the syrup so every bite is decadently moist. The cake is rich but, has a light feel to it and is balanced by the lightly sweetened whipping cream. 

You can make Tres Leches cake 1-2 days in advance. In fact, it will taste better when the liquid is soaked in the cake. You can store it with topping on top as well or wait for the topping before serving.

Even a beginner can bake a good Tres Leche. The easy way of making it buy a store-bought yellow cake mix, bake it according to the box instructions. Mix the cream mixture ingredients and pour it over the poked cake. Fridge it overnight or until the cake is soaked in the milk.     

Ingredients

Cream Mixture

  • Sweetened condensed milk      - 1can (14-ounce)
  • Evaporated milk               - 1can (12-ounce)
  • Heavy whipping cream          - 1/2 cup

Cake

  • Sugar                   - 1 1/2 cups
  • Butter                  - 1/2cup or 1 stick, softened
  • Vanilla extract         - 1tbsp
  • Eggs                    - 4nos
  • All-purpose flour       - 2 cups
  • Baking powder           - 1tsp
  • Baking soda             - 1tsp
  • Salt                    - 1/2 tsp
  • Whole milk              - 1 cup

Frosting

  • Heavy whipping cream    - 2 cups
  • Delce de Leche          - 1/2 cup
  • Powdered sugar          - 2 tbsp
  • Salt                    - 1/8 tsp
  • Warmed Dulce de Leche for drizzling, as desired

Instructions

  • Combine all cream mixture ingredients in a bowl and set aside.
  • Combine sugar and butter, beat at medium speed until combined. Add eggs, continue beating until light and fluffy.

  • Combine flour, baking powder, baking soda, and salt in another bowl, mix well. Then, add flour mixture to butter mixture and beat at low speed until well mixed. Add milk and vanilla extract, continue beating until well mixed.

  • Heat oven at 350F. Grease and flour 13X9 inch cake pan and set aside.
  • Pour batter into prepare pan. Bake 25-30 minutes or until a toothpick inserted into the center comes out clean and the top is browned.
  • While still hot, poke small holes on the cake with a stick and pour cream mixture over top of the cake. Let sit until liquid is fully absorbed. Refrigerate at least 4 hours or overnight.


  • Combine all frosting ingredients in a bowl, beat at high speed until stiff peaks form. Spread over top of the cake. Drizzle with additional dulce de leche, as desired.


Tips:

  • It is simple to make Delce de Leche. Just put a can of sweetened condensed milk in a pressure cooker with the can half sinking and cook till 10 whistles. Open the lid when it is cooled. Delce de Leche is ready to use.
