Chicken Masala

A simple chicken masala with no tomatoes and not much masala. The chicken masala goes well with roti, pulka, rice, or naan. My elder one the biggest fan of chicken wants chicken every day. So, I find different ways to make it. This is one way of making it within 30minutes. Here goes the recipe.  

Ingredients

  • Chicken             - 2 lbs
  • Onion               - 1 large size
  • Yogurt              - 1 cup
  • Fennel seeds        - 1 heaped tbsp
  • Green Chilli        - 3 nos
  • Cinnamon            - 2 medium size pieces
  • Bay leaves          - 2 nos
  • Cloves              - 2 nos
  • Cardamom            - 2 nos
  • Ginger-garlic paste - 2 tbsps
  • Turmeric powder     - 1 heaped tsp
  • Chilli powder       - 1 1/2 tbsps
  • Coriander powder    - 2 tbsps
  • Garam masala        - 1 tbsp
  • Coconut             - 1 cup
  • Curry leaves        - Hand full
  • Oil or Ghee.        - 1/2 cup
  • Salt                - to taste

Instructions

  • Heat oil or ghee in a kadhai and splutter the fennel seeds, green chilies, cinnamon, bay leaves, cloves, cardamom, and curry leaves.
  • Add the chopped onions and saute till golden brown.
  • Then, add the chicken to the onion and cook till the color of the chicken changes like it is slightly roasted.
  • Add the ginger-garlic paste, turmeric powder, and salt. cook the gravy for 5 minutes.
  • Then, add the yogurt and cook the chicken in the yogurt for 10 to 15 minutes till it is well cooked.
  • In a pan add 2tbsp oil and roast the coconut till golden brown and grind it into a coarse powder and keep it aside.
  • To the chicken add the chili powder, coriander powder, and garam masala. cook for 5minutes.
  • Add the coconut coarsely grounded powder to the gravy and cook for few more minutes if you want it as a dry roast or if you want a thick gravy cook for fewer minutes and turn off the stove. Add some curry leaves at the end.
  • Server with any complimentary main entries or just plain rice or pulkas.

 

Tips

  • If you are cooking the chicken in the pressure cooker just cook it for 1 whistle and then immediately release the whistle. In that way the chicken will be not overcooked at the same time it will cook soft. 

  • You can just roast the coconut and add it directly without grinding it.
