Instant Pot Mushroom Pulao

Easy and simple to make rice. Quick to make in the morning for packing lunch. With very few ingredients we can make this Pulao.  

Ingredients

  • Basmati rice        - 2 cups
  • Mushroom                - 2 cups
  • Cumin seeds             - 1 1/2 heaped tbsp
  • Bay leaves              - 2 nos
  • Star anise              - 1 no
  • Cinnamon stick          - 2 small pieces
  • Onion                   - 2 medium size
  • Tomato                  - 1 medium size
  • Ginger-garlic paste     - 1 1/2 heaped tbsp
  • Green chili             - 4 nos
  • Coriander leaves        - 1 cup
  • Mint leaves             - 1 cup
  • Yogurt                  - 3/4 cup
  • Coconut milk            - 1 cup
  • Ghee                    - 1/2 cup
  • Salt                    - to taste

Instructions

  • Heat ghee in the instant pot, splutter cumin seeds, bay leaves, star anise, cinnamon stick.
  • Chop the onions in lengthways and add them to the pot. cook till light brown.
  • Now add the chopped tomato, ginger-garlic paste, and needed salt. Cook till the tomato is cooked.
  • Add the green chilies,  yogurt, coriander leaves, and mint leaves. Cook till it will become a gravy.

  • Add the Mushroom to the gravy and cook for 2 minutes.
  • I add 3 cups of water for 2 cups of rice. In 3 cups of water I add 1 cup of coconut milk and the rest I will add water.  
  • When the milk-water starts boiling add the soaked rice. Cook till the water evaporates.
  • When the rice cooks and looks like the below picture. Close the lid and cook for 12minutes in rice setting.

  • Open the lid when the pressure is done. Serve hot with raita.




Tips

  • You can use a pressure cooker or a pan instead of an instant pot.
  • You can add 2% milk instead of coconut milk.
  • If you add pearl onion it will add extra taste to the rice.
